Lime Rice

Rice(Basmati/any other superior white rice) - 1 cup
Lime - 2 nos(squeezed)
Turmeric powder - 1/4 tsp
Ground nuts(Nilakkadala parippu) - 3 tbsp(roasted)
Green chillies - 2 nos(sliced roundly)
Ginger (chopped) - 1small piece
Asafoetida powder(Kayam) - 1/2 tsp
Coriander leaves - Few

For frying:
Oil - 2 tsp
Mustard seeds - 1 tsp
Cummin seeds(Jeerakam) - 1 tsp
Black gram(Uzhunnu parippu) - 1 tsp
Bengal gram(Kadalaparippu) - 1 tsp
Dry red chillies - 2(broken)
Curry leaves - As reqd

Preparation Method of Lime Rice in Kerala style Recipe

1)Cook rice in sufficient water and after proper draining spread out on a white cloth.

2)Heat oil in a pan and crackle mustard seeds. Add cummin seeds, black gram, bengal gram, red chillies and sufficient curry leaves.

3)Saute in low heat and add green chillies, chopped ginger and ground nuts.

4)After frying for some time, add turmeric powder and cooked rice . Keep mixing and sprinkle asafoetida powder and sufficient salt.

5)Remove the pan from fire and add lime juice. Mix and serve.

6)Lime rice is ready and garnish with chopped coriander leaves.
