Ingredients
Dosa shell:
1 1/2 cups rice
1/2 cup urad dal
salt to taste
Oil
Masala Filling:
2 large potatoes
1 medium onion (chopped)
1/2 teaspoon yellow split peas
1/2 teaspoon mustard seed
1/2 teaspoon turmeric
1-2 green chili
1 tablespoon oil
salt to taste
Making masala filling for masala dosa
Before dosa frying we have to make the potato filling for the masala dosa .
Heat oil in pan ,add mustard seeds ,let it splutter ,add peas onions ,spice ,stir for few seconds
Till onions turns brownish ,add cooked potatoes & mash it slightly – Now our masala filling is ready .
Method of cooking masala dosa recipe
To prepare the masala dosa batter separately soak the rice & urad dal for 6 hours /over night in water & in the morning grind it to fine paste separately ,mix together the rice batter & urad batter together & add salt to taste .
Leave in warm for fermentation for another three or four hours .Mix chopped onions & chillies after fermentation & mix it well
Heat a pan & grease it with oil or ghee .Spread the masala dosa batter to make thin dosa ,drizzle oil on the dosa ,once dosa starts to get separated from the pan put potato masala inside the dosa & fold the dosa –if the dosa is sufficiently thin & roasted well no need to flip the sides ,otherwise flip the sides & roast both sides of masala dosa beforing folding it with potato masala .
